Caseinate is a milk protein derived from casein, the main component of milk protein. It is produced by neutralizing acid casein.
Caseinates are highly soluble in water.
Caseinates are used in a variety of ways – primarily in the food industry as a protein supplement in diet products, sports nutrition, and infant formula. They also serve as emulsifiers or stabilizers in baked goods, ice cream, and sausage products, for example.
