Edible acid casein is a dried, highly purified form of milk protein from cow’s milk. It is produced by acidifying skimmed milk either microbiologically or with a mineral acid, which causes the casein to precipitate (curdle). Acid casein is therefore divided into two types: lactic acid casein and mineral acid casein. It is a highly functional and nutritionally valuable ingredient that is used in a wide range of foods: analogue and processed cheese, coffee whitener/creamer, caseinates, sports nutrition, protein fortification, etc.
